The following recipe is great for skinny guys looking to pack on some weight.
Ingredients
1 tablespoon ground cumin
1 teaspoon chili powder
1 pound chicken breast, cut in 1-inch cubes
4 tablespoons olive oil
1/4 cup lemon juice
2 (16 ounce) cans Garbanzo Beans, rinsed and drained
3 green onions, thinly sliced
1 red bell pepper,
diced 1/4 cup chopped fresh parsley
6 pita pockets
Non-fat plain yogurt or sour cream
Salt and freshly ground black pepper to taste
Combine cumin and chili powder in a plastic bag. Add chicken and shake to coat.
Heat 1 tablespoon oil in large skillet over medium heat. Add chicken; cook 5 minutes or until chicken is no longer pink, stirring frequently. Take off heat, set aside to cool.
Combine remaining ingredients, mixing well. Stir in chicken. Add salt and pepper to taste.
Cut top off pitas to open. Divide chicken mixture among the pitas; top with yogurt or sour cream, if desired. Makes 6 servings

1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch
thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry
****NOTE: IF YOU DON'T HAVE WINE OR SHERRY, YOU CAN SIMPLY USE
YOUR FAVORITE CHICKEN SAUCE. ALTHOUGH IT WOULDN'T BE A "MARSALA
DISH" ANYMORE, IT WILL STILL BE A GOOD WEIGHT GAINING MEAL.
Mix together flour, salt, oregano and pepper in bowl. Coat chicken pieces in the mixture
In large skillet, melt butter in oil over medium heat. Place chicken in the pan and lightly brown
Add mushrooms, add wine and sherry
Cover and let simmer for 5-10 minutes or until chicken is longer pink in the middle
Serve with brown rice. This will give you plenty of complex carbs to give your body the energy it needs to keep it from using protein as an energy source
